It is made from a mechanical night harvest, the vinification begins with a cold pre-fermentation maceration that lasts 8 to 12 hours before pressing which is where the fruit character is extracted. Pressing is done in an inert membrane press. Alcoholic fermentation is carried out in three fractions: steel tanks to exploit the fresh fruit aromas, concrete egg tanks to favor aromatic complexity and new French oak demi-muids to confer aromatic richness. This wine does not undergo malolactic fermentation, aging is on fine lees for 4 months, the three parts are assembled to finish with 2 more months of aging.
