REPRESENTATIVE SPECIES: Kermes oak (Quercus L.).
MAJORITY OF FLOWER COMPOSITION: Kermes oak (Quercus L.), Heather (varieties of Erica sp.), Thyme (Thymus vulgaris) and varied autochthonous wild flora
TIME OF PRODUCTION: Late summer and autumn.
COLOUR: Dark brown almost blackish mahogany to ochre-brown.
FLAVOR: Intense and persistent sweetness.
AROMA: Strong, compact and feral. PECULIARITIES: Raw honey, pure, non-homogenised, unfiltered, without added sugars.
STORAGE: Keep in a dry, semi-dark and cool place
