This caviar, originally from Lake Baikal in Russia, is obtained from the Acipenser Baeri, also known as Siberian Sturgeon. The roe is of medium size (2.5 mm.) and its colour varies according to each individual, in shades ranging from grey to light brown. It is a delicate and exquisite caviar, probably the most worked in aquaculture, hence the excellent result.
