This caviar is obtained from the Acipenser Gueldenstaedti. The roe is of medium size (about 2.7 mm.) and its colour varies in shades ranging from brown to dark green. It has accentuated notes of nuts, especially walnuts. It is one of the caviars most appreciated by conaisseurs. It is the most classic caviar.
