Nose: It has a long minimum aging, 36 months, which gives it a great aromatic complexity. In fact, we will not find primary aromas or fresh fruit, but a mixture of yeast, with notes of pastry or confectionery, and aromas of autolysis, which bring smoked, toasted, ripe fruit, cooked vegetables, nuts and forest undergrowth
