Breeding
This Classica Hacienda López de Haro Gran Reserva Blanco 2012 is aged for three years in Bordeaux barrels and a further three years in bottle. The oaks used are of the Quecus petraea species that come from a special selection of forests in France and Eastern Europe. These barrels are one third with one use and the other third with two uses.
La Sonsierra
The vineyards from which this wine comes from are old goblet-trained vines, some planted "al cuadro" and impossible to mechanize and with an average age of 65 years. They are located on limestone soils of the Sonsierra and terraces with clay-ferrous soils of the Alto Najerilla with a high altitude, which are located at the foothills of the Sierra de la Demanda facing north.
Harvesting and Winemaking
For this wine a manual harvest was carried out, on the same day and at different times of ripeness since, being different areas, it is carried out in this way to ensure that the varieties are at their optimum moment which gives the wine complexity and complementarity by bringing them together.
At the time of elaboration, a co-fermentation of all the varieties is carried out in the same tank with the yeasts from the different vineyards and at a controlled temperature between 17-18ºC in stainless steel tanks.
