DOUBLE-LIE is distilled with twice as much lees / lees that usually contains the heating wine. This cognac contains 200 mg / L of esters. That's three times more than the rate obtained with a conventional distillation on lees. It is the Maillard reaction between the lees and the copper in the still during the cooking of the heated wine that allows this exceptional extraction of esters.
