DESCRIPTION

Comisura is the result of a unique blend of grapes from a small old Verdejo vineyard and grapes from a few white grape vines planted among the centenary vines of our red Garnacha vineyards located on the banks of the Tiétar river south of the Sierra de Gredos. Different varieties such as malvar, albillo real, garnacha blanca and moscatel which, together with the verdejo grape, result in a maximum of 1107 bottles per year. VINIFICATION

Harvesting is done by hand in 15 kg crates. After finishing, the grapes are stored in cold storage at about 5°C and vatted the following day. Manual selection grape by grape in selection table after destemming. Gravity vatting.
Cold pre-fermentation maceration, very gentle pressing, static racking for 48 hours and temperature controlled fermentation at 16°C. Aging on
on fine lees for three months
