Ceylon cinnamon is the more expensive "true cinnamon". But most cinnamon products contain Cassia, which is poorer in antioxidants. So look for Ceylon cinnamon, which also contains much less coumarin, a potentially liver-toxic compound, than Cassia.
Ceylon cinnamon is all about antioxidants
Cinnamon is above all a highly antioxidant food that reduces free radical damage to cells. One study compared the antioxidant content of 26 different herbs and spices and concluded that cinnamon has the second highest amount of antioxidants (after cloves).
