Our Duck Rillettes are made with lean meat from confit carcasses. The carcasses are simmered in boiling fat for 3 hours as in the past in cooking pots, then skinned by hand. This meat is very lean and to make our Duck Rillettes as tender as you like, we add lightly roasted confit garnish, salt and pepper. Therefore, they are low in fat, the meat is stringy and full of flavor. The recipe of La CAMPAGNOISE Duck Rillettes remains the same since 1974.

To fully appreciate all the flavors and obtain a very smooth texture, enjoy at room temperature.
Serve fresh, alone as a starter or over a bed of green salad. Swallow on a good country bread with a glass of typically regional Amadour red wine.
Receipt of the "tourtous corréziens": Spread the duck fillets on a buckwheat pancake, roll them up and cut them into pieces for your appetizers.
