Made from a selection of the best grapes for the production of a quality sparkling wine
WINEMAKING:
The grapes are de-stemmed and crushed and then passed to the pneumatic press; then the must is destined to a tank to desfangar (decant) for a day, at the end of that time the clean part destined for fermentation (18ºC) is separated and the sludge is filtered with the vacuum filter. After fermentation, the wine is racked to separate it from the lees
The method of elaboration is the Traditional Champenoise, in which first the "Tirage" is carried out, which is where the base wine is bottled and the yeasts are added that will carry out the second fermentation in bottle (controlled temperature around 15º C). The wine will remain closed until after nine months, the "Degüelle" will be carried out where the bottle is removed from the plate that keeps it closed along with the yeasts, the exeption liquor is added and finally the bottle is corked
TAUGING NOTES:
Pale yellow color with golden highlights, fine bubbles, persistent and elegant; clean and fruity nose, apple and citrus aromas with light hints of dried fruits. The palate is fresh and sweet, with a fruity and elegant aftertaste
