This Barrel Aged Sour beer from Octavo Arte is the result of a meticulous process of mixed fermentation that combines strains of lactic yeast, Saccharomyces, and Brettanomyces.
After primary fermentation, the beer is transferred to "García Serrano" red wine barrels for aging for 3 months. It is at this barrel stage that fresh mango and apricot are added to infuse the beer with its characteristic aroma and flavor. It is then left in the bottle for at least another 3 months to finish aging.
As the glass is approached, intense and tempting aromas of fresh mango and apricot are released, followed by subtle notes of oak and red wine.
The funky and earthy aromas of Brettanomyces yeasts blend with lactic acidity, creating a complex and fascinating bouquet.
In the mouth, this beer presents a light to medium body with a smooth and effervescent texture that glides easily over the palate.
