On very specific days, at the beginning of the harvesting season, during the month of October, it is made from green fruits to achieve its unique attributes. At least 20 kg of olives are needed to obtain 1 liter of product, as the olive is still not fully formed with oil when it is green. So you can imagine how exclusive this oil is.
