One of the reasons to choose field-fed shoulder is that it meets almost the same requirements as the field-fed ham, but, being smaller pieces, they require shorter curing times and thus an Iberianshoulder of enormous quality and at a better price can be obtained. 50% Iberian breed: Obtained from pigs with a single parent who is 100% Iberian.
