It is an essential shellfish, it has a very high gastronomic value and although it is very similar to the japonica clam, the reality is that the fine clam has a whiter flesh, honeyed and with a touch of fat in the mouth that makes its taste more attractive and long. Sometimes it is eaten raw, as it is, or with a little lemon juice, although it is also very good stewed. In the markets we find it in different sizes, being the 18/20 pieces per kilo the largest that is marketed, but this has a very high value and are only a few of the finest restaurants who dare to put it on their tables
Although it is believed that the fine clam is always white, the truth is that we can find it with dark tones (especially waters of Portugal), white and brown and depending on the area of capture light tones and bluish spots. The reality is that the color of the shell does not affect its taste, but improves the survival of the clam making it better adapted to the environment in which it lives
