For Garage Beer, it is always a pleasure to welcome their neighbors from Cyclic Beer Farm. Their elegant, sour, and mixed fermentation style of beers is wonderful, so they wanted to use some of that elegance to create a sour kettle beer inspired by that manual.

It was about delicately balancing the ingredients to bring complexity to an easy-drinking sour beer.

• The careful use of hibiscus, orange blossom water, vanilla, and cinnamon results in a beer with a beautiful red hue that brings memories of Mexican Jamaica water and cranberry sauce paired with Christmas dinner.
• A dry finish with a slight sweetness rounded off by the vanilla makes it a very drinkable sour ale.
• Pairs well with ceviches, white meats, fresh fruit tarts, or with fresh or semi-cured cheeses.
