Many say that true Czech lager should be brewed using a decoction mashing method. What is decoction, you ask? Basically, it involves removing a portion of the wort to another vessel where it is subjected to a series of temperatures before boiling and returning it to the main wort. It is a traditional process historically carried out to subject the wort to various temperature levels and ensure the complete conversion of starch into fermentable sugar, but it also had many positive side effects, such as intensifying the malt flavor as a result of caramelization of the boiled portion, and improving the body and foam of the beer.

These side effects were exactly what they were looking for at Garage. Apart from the process, ingredient selection is crucial for the style. This means extremely soft water, Czech pilsner malt, Saaz hops, and a specifically selected yeast strain from one of the most well-known lager producers in the Czech Republic.
