Oats are a widely used cereal for cooking breakfast in the form of porridge, typical of Scotland, but it has conquered tables around the world. And this happens, not only because of its mild flavor, but also because of all the nutritional properties it provides us. As we say, oats are rich in nutrients, their carbohydrates are slow to digest, which ensures energy several hours after consumption. Regarding the gluten content of oats, this only occurs when there is cross-contamination with fields near its planting area where wheat is grown. When this does not occur, oats with less than 20 ppm are obtained, which is the limit set by current legislation for a food to be suitable for celiacs.
