Rilletes are a special way of preparing meat, in this case goose, compared to a classic pâté. On the one hand, the meat is carefully crumbled by hand, which gives it its particular fibrous texture and, on the other hand, it is made with duck fat and a series of vegetables, which gives it its flavour and creaminess. No preservatives.
Particularly creamy, these rillettes are cooked with the magrets and thighs of Southwest free-range geese.
