La CAMPAGNOISE 100% goose rillettes are made with lean meat from confit carcasses. As in the past, the carcasses are simmered in the
bubbling fat for 3 hours in the pots. They are then skinned by hand. To obtain tender rillettes with If desired, to this meat we add a lightly roasted confit garnish. The recipe for La CAMPAGNOISE Pure Goose Rillettes has remained the same since 1974.
