It is grown in temperate climates, its season is from June to September and there are three basic varieties of cucumber:

• Short cucumber and gherkin: Spanish variety, about 15 cm, green skin and striped yellow or white. When harvested small they are used for the production of pickles
• Medium-long cucumber: French variety
• Long cucumber: Dutch variety, exceeds 25 cm

It has an abundant content of water, if consumed with skin it provides fibervitamin Aand carotene. Due to its high water content, it has diuretic and laxative properties

It is consumed in salads and gazpachos and it is recommended to eat it fresh and with skin to take advantage of its properties
