Cinnamon (Cinnamomum Zeylanicum) is the dried inner bark of the cinnamon tree. This bark is extracted by cutting and then left to dry for 4 to 5 days in the shade, until it folds and acquires a brownish color that changes to reddish-brown after treatment with sulfur. The resulting sticks are cut and packaged to be sold for export. Cinnamon is also ground and sold as powder.
Usage:
Ready-to-eat food. Widely used in confectionery and pastry in all kinds of cakes, cookies, flans, custards, pastries, rice pudding, etc.
In cooking, it is used in both sweet and savory dishes. It is also widely used in the meat and sausage industry and to season drinks (punches and spiced wines). Intended for the general population.
Storage:
Store in a closed container, in a cool and dry place, away from direct exposure to sunlight and artificial light.
