Procedure of production:
The winemaking process begins with the manual harvesting of the grapes in 10kg boxes, collected at the optimum moment of sugar and phenolic ripeness. A rigorous selection of the bunches in the field and grape berries is made before entering the winery, using only the best quality grapes.
Alcoholic and malolactic fermentation takes place in 18,000 liter truncated cone-shaped tanks, ensuring proper temperature control to preserve the organoleptic qualities of the fruit. After fermentation, aging takes place in 225-liter Bordeaux barrels, with a combination of new and semi-new French and American oak barrels, for 24-28 months.
Finally, the wine undergoes a process of bottle aging until its optimal moment of consumption before its release to the market. The entire process is designed to guarantee the quality and excellence of the final product.
