Round, balanced with good sweet tannins, balanced acidity, and an easy but persistent mouthfeel. WINEMAKING: We select the best grapes from our vineyards at their optimal ripeness and harvest them in the early morning to take advantage of the cool night temperatures and avoid oxidation during harvest until they reach the winery. We have hopper trailers that go directly from the vineyard to the winery. The harvest is received throughout the night at the winery and we proceed to destem and crush. We apply liquid CO2 at -30°C to cool the grapes down to 10°C and prevent oxidation in the must. We macerate for 3 days at 12°C with frequent pumpovers and, once fermentation starts, we let the temperature rise to 28°C for 8 days to extract color and deplete sugar. We use our selection of yeast. We micro-oxygenate the wines to stabilize the color and carry out malolactic fermentation in tanks with our selection of lactic acid bacteria cultures. We vinify the different varieties separately and blend them before bottling after aging for a few months in American oak barrels. TASTING NOTES: Color: Bright red with tile shades. Aroma: Medium-high intensity, with a good balance of ripe fruit mixed with vanilla and toasty oak notes.
