The té oolong, also known as blue tea or semi-fermented tea, is a variety of Chinese tea that lies between black tea and green tea, being one of the most valued tea varieties today.
The importance of this Chinese tea is due, above all, to its many propertiess, especially antioxidants, but also to its unique flavor, very recognizable and appreciated. In fact, some of its varieties are among the most appreciated of the many that China produces.
Unlike other types of tea, the leaves of this tea have been subjected to a particular oxidation process that gives them their bluish black color and also provides some of its most outstanding organoleptic characteristics.
That oxidation is achieved in a process of aeration and sun exposure of the tea leaves. The aeration and drying time for Oolong type tea is much shorter than that used to oxidize black tea. This means that the oxidation is only partial and thus fixes its characteristic intense aroma, its mild and fruity flavor and the reddish tones of the infusion made with it. Therefore, when taken, this blue tea offers a taste halfway between green and black tea. It is not as floral as one, nor as strong as the other.
Although Oolong Tea is generally consumed very fresh, shortly after processing, there are some varieties that are reserved to be consumed after receiving a light roasting. This technique eliminates undesirable odors and makes the tea even smoother
