The mould that shapes this cheese from Teruel is patented by the Asociación Turolense de Productores de Leche y Queso de Teruel. It is shaped like a flower with 8 petals and when the cheese is cut into wedges, 4 hearts are formed.
The semi-cured sheep's cheese is made with raw milk and is left to mature for about 2 or 3 months. To remove the whey, we use a perforated mould. We present it in two sizes of approximately 330 gr. and 1350 gr. This cheese is special because of its peculiar shape
