Its vivid and intense purple-red color is due to the quality of the pure Iberian breed, and its high level of oleic acid is provided by the exclusive feeding with acorns during the montanera season in the pasture. The combination of both factors results in a unique product, with exceptional flavor and juiciness that is hard to match.

This action is possible thanks to one of the differentiating values of our company: traceability. Señorío de Montanera guarantees control over the entire production chain, from the breeding of Iberian pigs in the pasture to the production of the final product (hams, shoulders, sausages, and meats). 100% Iberian acorn-fed products are exclusive and limited, subject to the montanera period, a season between November and March when Iberian pigs live freely in the pasture and feed exclusively on acorns and natural grasses.
Technical specifications:
Ingredients: 100% Iberian acorn-fed shoulder, salt, preservatives (E-252 and E-250), and antioxidant (E-301).
Special storage conditions: Store in a cool, dry place at room temperature. Instructions for use: Secure the piece on a ham holder so that the outer area of the hoof is facing downwards. Once the natural covering has been removed, start slicing thin slices with the help of a ham knife. When reaching the bone of the piece, turn it over and repeat the operation. The ideal consumption temperature should be between 18ºC and 24ºC.
Expiration date: There is no expiration date, but it is recommended to consume within 6 months from the moment of sale.
Storage conditions: Dry and cool place (between 10º and 20º) and preferably hanging. Once sliced, it should be consumed immediately or wrapped in wax paper or transparent film to avoid contact with air. In any case, it is advisable to cut only what will be consumed. It has an approximate consumption period of 3 months once sliced, but it is recommended to consume it within 15-20 days.
