The DO Penedés by David Seijas (former sommelier of El Bulli) and Guillem Sanz. A carefree but serious white wine. Floral, citrusy, and fruity. Made mostly with Xarel·lo grapes, but also with Malvasía de Sitges and Moscatel, which makes it aromatic and exuberant. The Xarel·lo is aged for 4 months on lees. Citrusy, fresh, saline, agile, with hints of Mediterranean herbs and fennel.

Ikigall is a white wine from the non-existent Gallina de Piel Wines created by David Seijas, sommelier of ElBulli (2000-2011) and Guillem Sanz. A casual yet serious white wine. Floral, citrusy and fruity. With a high presence of Xarel.lo (85%) leading the way, and the freshness and salinity of Malvasía de Sitges (10%) and Moscatel de Alejandría (5%) bringing notes of Mediterranean herbs and hints of fennel. Very aromatic and exuberant. In the mouth, it evokes memories of vineyard peaches, citrus sensations of mandarin, and orange blossom.
