Javier Sanz Sauvignon Blanc is a 100% Sauvignon Blanc single varietal white wine, fruitier, ideal as an aperitif or to accompany seafood, grilled fish or cold dishes.
The grapes are harvested mechanically during the night and, at their optimum moment of ripeness, they are integrated with a destemmer. The winemaking process is meticulous, using cryomaceration and clarifying the must by gravity for a day. Fermentation is carried out at a temperature below 15ºC in stainless steel tanks. A slow fermentation is carried out to preserve the aromas as much as possible, followed by ageing on fine lees for 2 months.
Pale yellow colour with greenish glints.
Characteristic varietal aromas of lime and white flowers. It also shows notes of tropical fruit, such as pineapple and passion fruit.
In the mouth, it shows an acidity that increases the sensation of freshness and accentuates its tropical flavours. Medium-bodied and fresh. It leaves a pleasant floral and mineral aftertaste on the palate.
