The Verdejo grapes used to make this wine come from the winery's oldest vineyards in La Seca. They are the result of Javier Sanz's most personal selection.
They are 45 hectares of more than 40 years old. The soil where these vineyards are located is composed of a surface of pebbles and clay subsoil, factors that give the wine a mineral touch. The climate is continental with very cold winters, rain during spring and autumn and summers with very high daytime temperatures and decreases of up to 20ºC during the night. This marked continentality makes the grapes retain their acidity and the aromatic compounds that develop during the day.
Harvesting is mechanical at night, with an integrated destemmer, and manual. During the fermentation process a rigorous control of the temperature is followed with the aim of preserving the aromatic characteristics of this wine to the maximum. Criomaceration, must clarified by gravity during one day. Fermentation at a temperature below 15ºC; in stainless steel tank. Slow fermentation in order to preserve the fruit aromas as much as possible. Aged on its own lees for 3 months before bottling.
TASTING NOTES JAVIER SANZ VERDEJO:Brilliant in the glass, with slight greenish reflections. Its fresh aromas are reminiscent of sweet grapefruit and show slight notes of aniseed and fennel. On the palate it is dry, medium-bodied and with a refreshing acidity. Perfect for drinking at any time.
JAVIER SANZ VERDEJO SERVICE RECOMMENDATIONS:Cold, temperature between 6 and 8ºC. Excellent as an aperitif or to accompany seafood, salted fish, ceviche, sashimi, etc. It combines with delicate flavors and slightly seasoned white fish.
