Ginger is a plant of tropical origin from the Indian subcontinent. It contains oleoresin, in which the essential oil and pungent substances are prominent. The essential oil consists mainly of sesquiterpene hydrocarbons. It also contains monoterpene hydrocarbons, alcohols and aldehydes, such as camphene, linalool, neral and geranial. Ginger rhizome is very rich in starch (approx. 60%). It also contains lipids, such as triglycerides, lecithins and free fatty acids, and vitamins, especially vitamin C.
Traditionally, ginger has been used as a digestion stimulant (stimulating the secretion of saliva and gastric juice, as well as lipase and disaccharidase activity), cholagogue and carminative. It also has antiemetic (increasing gastric emptying and intestinal peristalsis) and anti-inflammatory (inhibiting arachidonic acid metabolism via both COX-2 and lipoxygenase, reducing prostaglandin and leukotriene biosynthesis) activity. Ginger extract is able to inhibit the induction of pro-inflammatory cytokines, which makes it of interest in the treatment of rheumatoid arthritis.
