This piece comes from the muscle located under the ribs of the pig, next to the backbone. Juan Pedro Domecq's pork is a 100% Iberian pig of the lampiño variety , the best variety of 100% Iberian pigs for the elaboration of Iberian products. Raised in Juan Pedro Domecq's pastures in the Sierra de Jabugo and fed with acorns during the 4 months of "montanera" ( double the time required by the regulations), they provide our production with an optimum quality, after the cutting of the pig, the "Maestro Chacinero" dresses each piece and then they are cured for more than 4 months to obtain the best 100% Iberian acorn-fed pork loin. Internationally recognized, with two gold stars at the annual Great Taste Awards in Great Britain , its high quality is more than proven, the average weight of the loins is 900gr. Vacuum-packed, it can be kept for 12 months as long as it is kept in a cool place.
