They live in freedom in Juan Pedro Domecq's pastures in the Sierra de Huelva, feeding on acorns during the 4 months of the "montanera" and on what nature provides the rest of the year. The pieces are elaborated and cured in a totally artisanal and natural way in Juan Pedro Domecq's cellars for a period of between 20 and 24 months . All the pieces have an individualized and constant follow-up, which allows us to guarantee quality and homogeneity. With the same origin and production process as the ham, its lighter weight allows for much faster curing and makes it especially suitable for home consumption, with a more intense texture and aroma than 100% Iberian Bellota Ham due to its higher percentage of intra- and intermuscular fat.
