Tasting notes: Green fruity and with a medium intensity. In the mouth its entry is sweet, has a light bitterness and a medium spiciness that appears with delay and remains. Fruity and slightly herbaceous hints. Apple, banana and herbs with an almond and nutty finish.

How it is made: it comes only from green olives from the first days of harvest. The milling is done at night so that the acidity of our EVOO does not rise. The oil is extracted cold. Once this process is completed, it is stored in stainless steel drums at the appropriate temperature while it is decanted until it is bottled
