This wine is harvested at night to prevent grape oxidation. It is produced in Finca Aylés: it ferments at controlled temperature with native yeasts. The preservation of its mineral character is possible thanks to the malolactic fermentation with a 10-month aging in used French oak barrels, resulting in an impressively and extremely delicious wine.
