Millton Te Arai Chenin Blanc 2015: Long and slow pressing. The juice is collected as a whole and allowed to settle for a short time to keep the sediment fine, as this is where all the nutrients that satisfy a well-behaved fermentation are found. Fermentation and maturation take place in demi-Muids (large 600 liter oak barrels) and stainless steel tanks. The wine matures in these tanks, without the intrusion of oak tannins, to respect the subtle fruit aromas.
