Asturian cheese with a strong smell and powerful taste, semi-hard, buttery and with an intense aftertaste on the palate. The production area of Cabrales cheese covers the Cabrales Council and three neighboring towns in the Peñamellera Alta Council.

Cabrales cheese is a natural cheese, handmade by the farmers themselves, with raw cow's milk or a mixture of two or three types of milk: cow, sheep, and goat. The milk used in its production comes exclusively from farms established in the production area and controlled by the Regulatory Council. The milk used comes from the two milkings of the day, in the morning and at night.

Once produced, the cheese is taken to natural caves in the mountains for ripening between two and five months, during which the artisan changes the position of the pieces in order to season each side. These caves are located in the heart of the Picos de Europa, where there is a cool temperature and high humidity. These conditions promote the development of penicillium-type molds in the cheese during ripening, giving it blue-green areas and veins. Its flavor is slightly spicy, more pronounced when made with pure goat and sheep milk or in a mixture.

Cabrales cheese barely has a rind, as it has a surface that is creamy and soft similar to the interior. The texture is creamy, with a strong odor, and is suitable for spreading or for use in high cuisine recipes that use cheese sauces as a powerful and exquisite complement to meats and vegetables.

This cheese is made by the Pastora Mayor cheese factory with the milk from their own livestock, which guarantees the quality of the final product. This Cabrales cheese is matured in the natural cave of Poo for two to four months, at stable humidity and temperature.
