Making
The aim is to make a totally artisan gin, as our ancestors did, applying artisan techniques and resorting to technology in the right measure
Thus, we start with organic alcohol of the highest quality, which is reduced with water filtered and purified by reverse osmosis, which will incorporate citrus, spices and flowers, all organic and very careful.
The mixture rests on the bottom of the bottle for a few minutes
The mixture rests in maceration tanks for a while, and then is distilled in copper stills.
The process of distillation
is carried out in the maceration tanks
The distillation process lasts about 14 hours, obtaining, after it, an aromatic concentrate that is left to rest again for about two months, to be finally filtered, analyzed and bottled.

The water of the spring rests in an aquifer with a millenary depth, and its flow remains constant. It supplies the noble town of San Esteban de Gormaz and more than 250 hectares of crops
