The best variety to experiment its use in the elaboration of mayonnaise or mild or delicate flavoured sauces, in which other varieties would impose too much its presence. In the same way, we recommend it for baking as a substitute for butter, especially in sponge cakes. In raw, we consider it very good for breakfast with toast and it fits perfectly with a tomato, and even with marmalade. In salads it goes very well with fruity ingredients, such as kiwis, apples and sultanas. It even adds a touch to fruit salads and fruit purees. It is also the oil we recommend to use with fish and seafood.
