Organic Black Onion

Produced in Córdoba (Andalusia) through a long process of natural maturation that combines controlled temperature and humidity, without the addition of additives or preservatives.

The result is a soft-textured onion with dark tones from the maturation process and a sweet and balsamic flavor, much more digestible than fresh onion, classified as gourmet.

Inside, it has a creamy mixture and the texture of traditional onion layers.

Ideal for combining with salads, stews, or even sauces.

Recipe for sea bream with almonds and black onion

Ingredients for two people:

  • 1 piece of sea bream
  • 1.5 onions
  • 2 cloves of garlic
  • 30 cl of brandy
  • 10 cl white wine
  • 4 almonds
  • 3 hazelnuts
  • Parsley
  • Vinegar
  • ½ black onion from Grandma Carmen
  • Salt
  • Extra virgin olive oil (EVOO)
  • Vinegar
  • Water

Steps to follow:

  1. Add the sea bream fillet to a pan, sear it on both sides, and set it aside.
  2. Thinly slice the black onion and add it to the pan, cooking for 7 minutes. Add the brandy and 50 cl of water, cooking over medium heat until it evaporates.
  3. Place the white onion on a baking tray. Next, place the sea bream and add a drizzle of EVOO. Leave it in the oven for about 8 minutes at 180 degrees.
  4. While the sea bream is cooking in the oven, add the chopped garlic, almonds, and hazelnuts to a new pan. Once golden, add the wine and let it reduce.
  5. Next, add the parsley and the previously cooked black onion.
  6. Once everything is ready, add the mixture to the sea bream.
