Black tea undergoes a natural fermentation phase unlike green tea. Its leaves are left to dry and then rolled, successfully breaking down the leaf cells so that the tea's enzymes come into contact with its other components.
The fermentation of tea causes a change in the chemical composition of the tea leaf. Its tannin content decreases and the theine becomes more active. That is why black tea is the ideal morning tea.
The quality of the tea depends on the harvest. It is determined by the number of leaves picked in addition to the bud: the greater the number, the finer the harvest. This tea comes from a premium harvest: as only the buds that concentrate the tea components (tannins, theine and aromatic compounds) and the first two leaves are taken.
