The red rice owes its color, like the purple onion, to anthocyanins (a water-soluble pigment present in many foods), which are found in the husk of the cereal. This type of rice requires a longer cooking time, approximately 30 minutes depending on the variety, as it retains a higher percentage of husk, which contributes to it being less sticky than other whole grain rices but needs more time on the stove.
