Guacamole is a dish native to northern Central America and more specifically Mexico. It is customary to mix ripe avocados with fresh chilli, fresh coriander, onion, tomato and lime juice in the absence of lemon. Originally guacamole obviously did not include cilantro, lemon or onion, which were imported by the Spaniards during the various colonizations
