It is one of the most used ingredients in Middle Eastern and North African cuisine, being the base for stews, pilaf, or salads, usually soaked in water. High in fiber, niacin (vitamin B3), magnesium, and phosphorus. Source of proteins, thiamine (vitamin B1), vitamin B6, iron, potassium, and zinc.
