Pate made with mussels of the species Mytilus Galloprovincialis from certified organic aquaculture harvested from organic production rafts located in the Ria de Arousa. Handmade according to the traditional recipe with tuna, Hojiblanca variety olives, first cold-pressed extra virgin olive oil, onion, garlic and pepper from certified organic farming.

Angling, a method recommended and considered sustainable by several conservationist organizations, prevents discards of unwanted sizes and of non-commercial or protected species, ensuring the natural stocks necessary for the maintenance of future generations of the species. This fishery is developed under the fishing regulations of the European Union, is controlled by ICCAT, (International Commission for the Conservation of Atlantic Tuna) and supervised by the Earth Island Institute, (Dolphin Safe)
