Bodegas Robles, located in Montilla (in the Campiña Sur Cordobesa), has been making its wines since 1927. The elaboration of the sweet wine Pedro Ximénez begins in the "asoleo" (the traditional system with which the grapes are dried in the sun in order to be prepared to make wine). During this moment, the grapes that have been harvested in August are spread out in the paseras, a gently sloping part of the Bodegas Robles vineyard. At this time special care is taken to ensure that the raisining of these grapes is homogeneous and regular, turning the bunches of grapes by hand
Bodegas Robles is one of the few wineries that still has its own raisining vats, which allows them to take extreme care in the elaboration of the raisined grapes, a work that they themselves consider to be the last artisan work of the Andalusian countryside
Once in the winery, the raisined grapes are spread out in the capachos and a hydraulic press is responsible for crushing the raisins and extracting the must, which releases an impressive range of sweet aromas reminiscent of quince jelly and honey. This must is kept in barrels and this is how Bodegas Robles' sweet Pedro Ximénez wine is finally born.
