Considered together with the tenderloin and the high loin as pieces of Extra category, the low loin is the back part of the loin, also lean, juicy and tender. While the high loin are the ribs of the long ribs, these are those of the short ribs, its culinary use is the same. Ideal for grilling and grilling.
