Raw honey is different from processed honey, raw honey means that the honey is packaged from the hive to the jar with minimal interference, preserving all the minerals, vitamins, pollen, propolis, royal jelly, and other natural additives of raw honey.
Most industrial honey is highly processed to always look the same and appealing, as a result of these processes and pasteurization carried out by many producers, enzymes, pollens, and most of the properties of honey are lost.
The raw honey we harvest subtly varies in some of its nuances such as the color from one batch to another, so you may perceive some variations from one season to another, due to rains, temperatures during flowering that cause blooms to advance or delay, producing variations in the flavor of our pure honey.
Please note that raw honey crystallizes and this is a natural process that mainly occurs due to the natural glucose in raw honey.
The crystallization process is natural in raw honey, it is a process by which honey hardens. You can perfectly consume it in that state, but if you wanted to reverse that state, simply place it in a water bath for a few minutes, making sure not to exceed 40º.
