Multi-flower Honey

Color: amber - dark amber.
Aroma: floral, with a clear and marked woody component, reminiscent of dry wood. Multi-flower honey comes from several simultaneous blooms and presents a very variable color and flavor.
Taste: sweet with salty notes and, frequently, with bitter and acidic notes depending on the area.
Texture: tendency towards low crystallization, except if it has a significant amount of legumes.

Eucalyptus Honey

Color: light amber; sometimes, when it contains some broom or heather, a little darker.
Aroma: wet wood, very intense and persistent.
Taste: sweet, with slight acidic notes and, if accompanied by broom or heather (darker), slight salty notes. Increased olfactory sensation in the retro-nasal passage.
Texture: tendency towards medium crystallization and fine crystals.
Production Area: Extremadura.
Harvest Time: Summer.

Forest Honey

Color: amber - dark amber.
Aroma: floral, with a clear malty component (reminiscent of toasted cereal), intense and moderately persistent.

Color: very dark amber
Aroma: Malty, toasted, very intense and persistent, with a floral component
Taste: Powerful flavor, sweet but with a consistent salty background
Texture: Tendency to have low and slow crystallization

Harvest: Late summer - autumn.

Rosemary Honey

Color: light yellow.
Aroma: slightly intense, medium persistence, floral with camphor tones

Texture: fine crystallization if rich in almond, and thick if rich in broom.

Aroma: floral, with a clear, intense and persistent component of methyl anthranilate.
Taste: Sweet, very characteristic, soft and exotic flavor, with very marked acidic notes and different from other honeys with a clear, very marked acidic component. Increase in retro-nasal olfactory sensations.
Texture: slow crystallization and fine crystals
Production Area: Southern Extremadura, Andalusia and the Southwest coast.
