It is a wine made with 100% Bobal grape variety. The grapes that give origin to this wine come from vineyards where work is done in a balanced, respectful, and sustainable way. The cultivation soils take center stage, as they are very active, with good biological conditions that facilitate the rapid assimilation of reincorporated organic matter, allowing them to express their full potential.
This wine originates from vineyards over 60 years old, where the potential for quality and necessary balance for the production of a characterful wine becomes clear. The grapes are harvested in boxes at the end of October, with a selection of bunches upon entering the winery. It undergoes a long and unique production process with pre-fermentation maceration phases in cold temperatures and a brief alcoholic fermentation at low temperatures. After this stage, the wine undergoes malolactic fermentation in 100% first-use French oak barrels and ages in them for 6 months. Finally, the clarification, stabilization, and filtration processes are carried out in the most respectful way possible to preserve its characteristics once bottled.
The ideal serving temperature is between 15 and 17ºC.
